Main Ingredients
- 2 Cups Cooked Udon Noodles
- 3 Cups Mung Bean Sprouts (9 oz)
- 2 Cups Garlic Chives (4 oz)
- 4 Strips Bacon (½ Cup)
- 1 Cup Onion
- 1 Cup Green Onion
- ½ Cup Carrot
- ¼ Cup Green Hot Pepper (Optional)
- 2 Tbsp Butter
Seasoning Ingredients
- ¼ Cup Water
- 3 Tbsp Hot Pepper Powder
- 3 Tbsp Cooking Oil
- 2 Tbsp Garlic, Minced
- 1 Tbsp Sugar
- 1 Tbsp
- 1 Tbsp Sempio Yondu (Optional)
- ¼ tsp Salt
- Some Black Pepper (Optional)
- Some Sesame Seeds (Optional)
Directions
Cut 4 strips of bacon into ¼ inch slices.
Melt 2 Tbsp of butter and add the bacon. Fry for about 3 minutes on medium-high, or until the bacon becomes crispy. Since I used lean turkey bacon, I used 2 Tbsp of butter for this recipe, if you use normal bacon, which has more fat, skip or reduce the amount of butter.
Remove the bacon from the pan, leaving the grease in the pan. We will use the cooked bacon later.
Add 3 Tbsp of cooking oil, 2 Tbsp of garlic, and 3 Tbsp of hot pepper powder in the pan. Fry for about 30 seconds on medium-high. This will give you a nice flavor.
Add the rest of the seasoning ingredients: ¼ cup water, 1 Tbsp sugar, 1 Tbsp soy sauce, 1 Tbsp Sempio Yondu (optional), and ¼ tsp Salt. Turn off the heat and set it aside while you are preparing the other ingredients. If you do not have Sempio Yondu, you can adjust the flavor with soy sauce, salt, or fish sauce.
Obtain some thick noodles for udon. I used about ½ pound uncooked frozen udon noodles.
Cook the noodles in boiling water for about 7 minutes on medium-high. Depending on the noodles, the cooking time will be different, so follow the instruction for your noodle pack.
Meanwhile, prepare the vegetables. Wash and drain 3 cups of mung bean sprouts. Wash and cut 2 cups of garlic chives and 1 cup of green onion into 1-inch pieces. Cut 1 cup worth of an onion thinly. Cut ½ cup of carrot into a similar size as the garlic chives. Cut ¼ cup of green hot pepper into thin strips.
When the noodles are done cooking, rinse them in cold water twice to remove the extra starch. Drain.
We will need about 2 cups of cooked udon noodles for this recipe.
Heat the pan and sauce again. Add the onion and carrot in the pan. Fry for about 2 minutes on medium-high.
Add the noodles, mung bean sprouts, garlic chives, green onions, and green hot peppers.
Do not forget to add the cooked bacon too. 😉
Mix all the ingredients well and cook for about 5 minutes on medium.
Sprinkle some sesame seeds on top before serving. It looks very appetizing, doesn’t it? Enjoy!

First of all, I am a big fan of your cooking videos. I have tried many of your dishes and have become regular dishes on my families table. I recently tried this dish and it was delicious. I did substitute the udon for regular spaghetti noodle and at the end product I drizzled sesame oil an it gave it a kick. Over all delicious meal!
