hi Bianca,
I’m sorry to say but it is not easy for me to tell you without making a vegetarian version of this soup by replacing something for the beef..because the beef broth does have a good and important flavor for the soup. If you still want to try it as a vegetable version, it might be kind of more blend flavor than this.. but you can try my vegetable broth for the recipe.. here is a link for you just in case you want.. thanks

Alvast bedankt!
Bianca

hi Rebecca, Oops, I’m sorry for late reply.
If you make this lunar new year soup again.. in coming lunar new year holidays.. or in the future.. this is my recommendation.
Whatever you have in Australia.. the beef you use for stew, soup.. you can use that type. When I didn’t have right kind.. just beef tenderloin worked too for this recipe.. Thanks ^^

I’ve been given the task of making New Year breakfast for my mother in law and I live in Australia. We don’t normally have beef brisket available at the stores. Although they may be available at some Vietnamese butchers – we don’t have any in my area and I have two small kids (can’t travel far). Can you recommend an alternative cut of beef to use?
Thanks,
Rebecca

Thank you for posting this for us. If I want to make enough for 4-5 people, (I noticed that your recipe yields two servings) what should I do differently? Will doubling all the ingredients work?
Thanks and God bless!
