if you see cooking wine in my recipe, it is usually not critical and small amount.. so you can skip it… or replace it with water.. Thansk.

Yes, since the kimchi will have spicy and salty flavor.. just follow the recipe and do not use all the sauce.. but adjust the amount later.. like use 1/2 or 2/3 of the sauce for cooking with your kimchi.. then later taste it to see if you need more sauce in it or not. πŸ™‚
